High levels of particulate matter from traffic are known to harm health. However, fine dust particles are also generated right in our homes, often overlooked.
Research identifies the kitchen as a primary source. Frying and baking can release particulate matter far exceeding World Health Organization (WHO) standards. This topic features in the science program De Kennis van Nu, where frying a hamburger spiked levels 67 times above WHO limits.
The findings come from a study where participants wore particulate matter monitors for five days. Peaks occurred during commutes and cooking. Strikingly, 3% of the time accounted for 30% of total exposure. Health impacts from kitchen-generated particles are under ongoing investigation.
