Nutrition coach and Lazyfitgirl founder Anki Willemsen shares her balanced lifestyle in the March issue of Santé magazine. Here's an inside look at her food diary.
"I used to be all-or-nothing with eating, leading to endless yo-yo dieting. Now, I've embraced intuitive eating: fueling up when truly hungry, without rigid rules. It was small steps that taught me to savor food again." Read the full interview in Santé issue 4.
"I usually eat around 10 AM when hunger hits. I choose nutrient-dense options like low-fat cottage cheese with muesli, nuts, and fresh fruit. My favorite is oatmeal with vanilla extract, banana, and cocoa nibs, topped with peanut butter and cocoa powder."
"Typically wholemeal or sourdough bread with hummus, avocado, aubergine spread, and tomato. Or a grilled whole wheat wrap with 30+ cheese and roasted vegetables. Veggies are always abundant."
"We enjoy familiar dishes with smart swaps, like oat cooking cream instead of crème fraîche. Favorites include casseroles, soups with beet burgers on buns, or weekly nutritious pizzas with my sons. Inspiration comes straight from the Lazyfitgirl community."
"Processed snacks drain my energy and spark sugar cravings, so I opt for meal-like bites like whole-wheat crackers with vegetable spread. Evenings often feature chocolate or cookies—intentional moments of joy."
