Once hesitant to experiment beyond traditional Dutch cuisine, Sandra Waterschoot-Koopmans (33) discovered a passion for global flavors. She launched Leukrecepten.nl to help others build kitchen confidence through simple, inspiring recipes.
“Weekdays start with my go-to: oatmeal cooked briefly in almond milk, topped with banana, kiwi, or peach. I pair it with orange juice and coffee or green tea. Weekends call for indulgent spreads like croque madame or French toast.”
“Favorites include whole wheat crackers with avocado, goat cheese, and a hint of chili, or sandwiches with pesto, tomato, and mozzarella. I batch-cook fresh soups for multiple days. Occasionally, I opt for treats like a vegetarian sausage roll.”
“Variety rules since I develop new recipes for the blog. Quick meals are falafel sandwiches; otherwise, casseroles or quiches shine. Once weekly, it's leftovers night—pasta or stir-fries using what needs to go.”
“Tea flows all day, with cookies or chocolate as treats. Baking cakes or pies for testing (and sharing with guests) is common. Evenings mean fruit, crackers, or corn wafers. Chips make a weekly appearance.”
