- 200ml of water
- 100 ml of organic virgin olive oil
- 1 glass jar with lid that resists high temperatures
- Container for storing the essential oil
1. Heat 200 ml of water in a saucepan until simmering.
2. Peel the lemons, taking only the rind without the white pith.
3. Remove pan from heat and blanch peels in hot water to remove bitterness.
4. Steep for 1-2 minutes; the water will turn slightly yellow.
5. Place empty jar upright (no lid) in another saucepan.
6. Pour olive oil into the jar.
7. Add blanched peels to the jar, discarding yellow water.
8. Fill the saucepan halfway with water around the jar.
9. Heat gently in a bain-marie over low flame for about 3 hours.
10. Remove from heat and let stand at room temperature for 24 hours.
11. Strain and transfer the lemon essence to storage containers.
