Many fruits contain the highest concentration of fiber in their skin. Whenever possible, skip the peeling to reap the benefits—even fuzzy kiwis count.
Simply slice off the top and enjoy the rest with the skin on. This delivers essential fiber plus vitamins concentrated just beneath the surface. It may take some practice, but start with smoother varieties like Zespri SunGold kiwi for an easier introduction.
Exceptions apply: save oranges and pineapples for peeling. More often than you'd think, the skin is fair game.
