Ingredients
- 5 large tomatoes
- 2 cloves of garlic
- 2 onions
- 250 g mixed cherry tomatoes
- 1 tsp chili powder
- 2 tsp curry powder
- 20 g fresh basil
- 250 g grilled bell pepper (from a jar)
- 400 g vegan and gluten-free spaghetti
- 250 ml Alpro Cuisine Light OR 250 g Alpro vegetable variation on Quark No Sugars
Preparation Method
- Preheat the oven to 160°C, line a baking tray with baking paper, and bring a large pan of salted water to the boil.
- Halve the large tomatoes and one garlic clove, and roughly chop one onion. Arrange on the lined baking tray, drizzle with olive oil, and season with salt and pepper. Roast for 40 minutes.
- Finely chop the remaining onion and garlic. Heat olive oil in a large frying pan and sauté over medium heat until softened. Halve the cherry tomatoes, add to the pan, and season with salt, pepper, chili powder, and curry powder. Lower the heat and cook for 5 more minutes.
- Meanwhile, blend the roasted tomatoes, half the fresh basil, and grilled peppers until smooth. Season to taste with salt and pepper.
- Cook the pasta according to package instructions.
- Stir the roasted vegetable blend and Alpro Cuisine (or Alpro vegetable Quark alternative) into the frying pan. Simmer for 6 minutes.
- Drain the pasta and toss with the sauce until every strand is coated. Garnish with remaining chopped basil and serve immediately. Enjoy!
