Recipe for spaghetti with roasted tomato-paprika sauce

Spaghetti is always a good idea. This vegetable dish will be on the table in no time. Success guaranteed. Extra fun:we're giving away an Alpro package.

Ingredients

  • 5 large tomatoes
  • 2 cloves of garlic
  • 2 onions
  • 250 g mixed cherry tomatoes
  • 1 tsp chili powder
  • 2 tsp curry powder
  • 20 g fresh basil
  • 250 g grilled bell pepper (from a jar)
  • 400 g vegan and gluten-free spaghetti
  • 250 ml Alpro Cuisine Light OR 250 g Alpro vegetable variation on Quark No Sugars

Preparation method

  1. Preheat the oven to 160°C, line a baking tray with baking paper and bring a large pan of salted water to the boil.
  2. Halve the large tomatoes and one of the garlic cloves and roughly chop one of the onions. Place everything on the baking tray lined with baking paper, drizzle with olive oil and season with salt and pepper. Roast in the oven for 40 minutes.
  3. Finely chop the other onion and garlic, heat olive oil in a large frying pan and sauté over medium heat until soft. Halve the cherry tomatoes. Season the onion and garlic with salt, pepper, chili powder and curry powder. Stir in the cherry tomatoes, lower the heat and sauté for another 5 minutes.
  4. Meanwhile, place the roasted tomatoes, half of the fresh basil and the grilled peppers in a blender and blend until smooth. Season with salt and pepper.
  5. Cook the pasta according to the instructions on the package.
  6. Take your frying pan with vegetables and stir in the roasted vegetable blend and the Alpro Cuisine OR the Alpro vegetable variation on Quark No Sugars. Then let it simmer for another six minutes.
  7. Almost done! Drain the cooked pasta, then add to the saucepan and stir until every strand is coated. Finally, sprinkle with the rest of the chopped basil and serve immediately. Enjoy!
